CONGO BARS

From Living Without June/July 2008

Congo Bars have a rich, butterscotch taste. These bars freeze well. Recipe makes up to 36 bars.

2 ½ cups gluten-free all-purpose flour
2 tsp baking powder
¼ tsp xanthan gum
1/8 tsp salt
¾ cup unsalted butter or margarine, melted
2 1/3 cups packed light brown sugar
3 eggs
1 ½ tsp vanilla extract
2 cups chocolate chips
½ cup walnuts, lightly toasted

  1. Preheat oven to 350 degrees. Lightly grease and flour a 10x10-inch or 10x15-inch pan. (Use the square pan for thicker bars.)
  2. Mix together flour, baking powder, xanthan gum and salt.
  3. In separate bowl, mix together melted butter and sugar. Add eggs one at a time, beating well after each addition. Add vanilla.
  4. Gently mix dry ingredients into liquids. Then fold in chocolate chips.
  5. Spoon batter into prepared pan, spreading evenly. Bake in preheated oven until the top is golden brown, about 25 to 30 minutes, or until done. (These bars taste better if they’re slightly under-baked.)
  6. Transfer to wire rank and let cool. Cut into bars.
