GLUTEN-FREE PEANUT BUTTER COOKIES

Ingredients
Peanut butter 1 cup
Brown sugar 1 cup
Egg, slightly beaten 1 large
Vanilla 1 tsp
Baking soda 1 tsp
GF AP baking flour 2 TBS
Chocolate chips (optional) ½ cup
Directions
1. Preheat oven to 350º F.
2. Mix ingredients together and roll into 1-inch balls and place on an ungreased cookie sheet
3. Flatten slightly with a fork
4. Bake for 8 to 10 minutes at 350º F
5. Let set on cookie sheet 3 – 4 minutes before removing
