SWEET-SOUR SAUCE
1 can (8½ oz.) pineapple in juice
3 TBS brown sugar
½ red bell pepper
2 TBS cider vinegar
1½ Tsp cornstarch
1 TBS gluten-free soy sauce
Drain pineapple juice into a small saucepan. Stir in cornstarch, brown sugar, vinegar, and soy sauce. Bring to a boil while stirring.
Use a food processor to combine pineapple and red pepper into a puree. Add the puree to the liquid and boil for one minute. You may add a bit of red pepper flakes for more heat.
